Banana Nut Bread
Did you know, you can freeze your over ripe bananas and use them later with this EASY Banana Bread Recipe. You will Love the Moist, Sweet Bread from all these bananas. The Riper the Banana, the better.

  • Servings: 1 Loaf

Ingredients

  • (450 Grams) Very Ripe Bananas
  • (1/2 Cup) Vegetable Oil
  • (100 Grams) Sugar
  • (100 Grams (Cracked Eggs)) 2 Large EGGS
  • (1 TSP) Vanilla
  • (120 Grams) All Purpose Flour
  • (1/2 TSP) Sea Salt
  • (1 TSP) Baking Soda
  • (1/4 TSP) Nutmeg
  • (1/2 TSP) Cinnamon
  • (65 Grams (and a little extra for the topping)) Chopped Pecans

Directions

This recipe can be made by hand in mixing bowls or a stand mixer.  


Everything in Place:
  Gather up all your ingredients. 

First, Combine the Wet Ingredients:

Mash the bananas / or mix in the stand mixer

Add the Eggs, Vanilla, Vegetable oil and Sugar (Mix until well combined)

Next, whisk together the dry ingredients:

In a medium bowl, whisk together the flour, baking soda, salt, cinnamon and nutmeg.

Add the dry ingredients to the wet ingredients...

Mix until just combined. IMPORTANT! be careful not to overmix or your bread will be dense.

Fold the Pecans into the Batter.

You are now ready to Bake!

Grease your bread pan with a little oil to prevent sticking

Transfer the batter to the loaf pan and sprinkle pecans on top.  (I personally like to cover the entire top of my bread with pecans)

Bake at 350 for about 60 Minutes or until a toothpick inserted comes out clean.

Baking Tip:  Check the bread halfway through.  If the top is well browned but the loaf still needs more time, cover it with foil making a tent to allow for the bread to rise without touching the foil.  

For a Moist loaf, it is Important to weigh your ingredients and don't cut yourself short on the bananas.
