Homemade Mayonnaise

This Recipe was sent to me by my son, Ryan, who is a Chef in Montana where they make everything from scratch.

Ingredients
- (1) Egg Yolk
- Cold Water
- (8 oz) Oil (vegetable oil preferred)
- (a sqeeze) Fresh Lemon Juice
- (Dollop) Dijan Mustard
- (Pinch) Salt
Directions
Equipment: Food Processor or Stand mixer with which attachment
Place 1 fresh egg yolk in your food processor
Add 10 drops of cold water
Turn on your mixer
Add a dollop of Dijan Mustard
Cut your lemon in 1/2 and add a squeeze of lemon.
Add your pinch of salt. careful a little goes a long way.
Add your oil in as you are mixing - Very slow
Add drops of water for a thinner texture.
(NOTE) If you add your oil too fast you will end up with mayonnaise soup!
